Healthy Chocolate Brownies (gluten free)

I know this sounds too good to be true, but I tried these out with my girlfriends on a weekend away last week, and they were a hit. I didn’t even tell them the ingredients until after they had eaten them and were all gushing at how delicious they were.

One of the things that makes this so healthy and easy is that there is no sugar! The base is made from apple. I have ready many recipes where you can use stewed apple as an egg replacement, so you can give that a try if you want to, but I have added in the eggs to make it a little more like the “real” brownies. The trick is to make sure you finely grate the apple or even better still – use a food processor or stick mixer to get all the apple into tiny pieces so there is no evidence of the fruit component. My friends had no idea there was apple in these.

Ingredients:

  • 3 medium apples
  • 2 eggs
  • 1/4 – 1/2 cup of milk (can substitute with nut milk if you are lactose intolerant)
  • 50 grams of butter (optional – but I like to use this to give it a bit of extra sheen)
  • 1 cup almond meal
  • 70 grams of Cocoa powder
  • 1 teaspoon baking powder

Method:

  1. Roughly chop the apples and blitz them in the processor or with the stick mixer for 1 minute.
  2. Add the eggs, melted butter and milk and mix together for another 30 seconds
  3. In a separate container mix the dry ingredients (almond meal, cocoa powder and baking powder)
  4. Add together the wet and dry ingredients and mix in processor/stick mixer for another minute, until all ingredients are combined.
  5. Scoop/pour into a prepared baking tin (approx 22 x 12 cm) and bake at 170 degrees Celsius (fan forced) for 20-25 minutes.
  6. Check with a skewer to ensure brownie is cooked in the middle.

Serve warm or cold with fruit on the side.

OPTIONAL EXTRAS for that decadent factor

  • Half a cup of roughly chopped walnuts
  • dark chocolate bits added in just before pouring into the baking tray
