Who doesn’t love a good rice paper roll?
Did you know they are simple to make all you need is some fresh ingredients and a sauce (homemade or bought – I won’t judge!) and voila – a light meal at your finger tips. Best of all – if you prepare the ingredients ahead of time, you can get everyone to make their own whilst having fun and a conversation over the dinner table.
Here’s what you need
Ingredients:
- Cooked chicken breast – shredded ( sometimes I steam or boil mine, but if I haven’t much time I just buy a cooked chicken and shred the meat from the bones
- Coriander leaves and you can also finely cut up the stems (I’m a big fan of using as much of the plant as yo can)
- Mint leaves roughly ripped or whole if only small
- Julienne carrots (or finely sliced carrot straws)
- Cucumber – sliced length ways and seeds removed
- Lettuce leaves – whichever type you prefer, but I find Iceberg or butter lettuce works best
- Rice noodles/sticks – soaked in boiling water until soft and then rinsed and drained in cold water
- Rice Paper
- Large bowl of lukewarm water
Method:
Set out all the ingredients as outlined above, grab a dry piece of rice paper and dip it in the bowl of water – ensure the whole piece is immersed in the water, but make sure not to crack it
Let it drain for a few seconds before placing it flat on a plate
Add all the ingredients, in a line in the middle of the rice paper – ensuring a couple of cm are left at either end – hint – I like to place the lettuce leaf down first and cradle all the other ingredients inside it as this makes it easier to roll.
Fold one long side of the paper (which by now will be soft and very pliable) over the ingredients and fold the sides in and on top of of the first fold at the sides.
Roll the rest of the paper toward the open side so that it neatly wraps all the ingredients inside.
It is now ready to eat or dip into a hoisin, sweet chilli or peanut sauce – whichever you prefer.
